Hakata Issou: Fukuoka’s Foamy ‘Tonkotsu Cappuccino’

Originally published · Korean source last modified

A line is almost part of the experience at Hakata Issou (一双). Similar queues appear around Fukuoka, but this ramen shop was founded here by two brothers in 2012. The original record lists three city locations: the main shop and Gion near Hakata Station, and Nakasu by the river. Hours differ by branch. Leave time for the wait rather than planning a tight stop.

Issou’s signature is broth foamy enough to resemble cappuccino, produced by boiling pork-bone stock for a long time. The original reviewer points to the long lines and describes it as highly rated on Japanese ramen-review sites; no current ranking is established by this archive.

The rich, smooth pork-bone soup pairs with thin noodles. It is concentrated enough to feel almost like a loose porridge, with particles that seem like finely broken-down pork bone. The pork aroma is strong, so the reviewer would not recommend it to someone who finds that smell difficult. For lovers of intense tonkotsu, however, it is a delight.

Order from the ticket machine. Korean support was not available in the source visit, so use menu photos or ask staff for help; English-language service is not established by that observation. There is one basic ramen, with prices varying by toppings, and additional toppings can be bought separately. A soft-boiled egg or extra chashu adds variety. Raw garlic, pickled mustard greens, sesame, and pepper sit in front of you. Start with the bowl as served, then add each gradually. The crisp, spicy mustard greens cut through the soup’s richness.

This locally popular tonkotsu shop nearly always had a wait in the original account. Weekends and evenings could mean more than an hour. The interior is small, with few seats but relatively quick turnover. Orders use the machine, and noodle firmness can be chosen. The reviewer suggests arriving at the recorded 11 a.m. weekday opening or avoiding lunch and dinner by trying around 3–5 p.m. Other branches may have shorter lines. The closing paragraph names Nakasu and a ‘Hakata Station branch,’ which does not exactly match its earlier three-branch list; check the specific branch and map rather than assume that identity.
